The best ribs in Brno: my ongoing guide to the city’s most iconic žebra

Discover Brno’s best ribs with my ongoing, personal guide — updated after each new spot I try. Honest reviews, local tips, real flavour.

There are a few things you inevitably start appreciating when you move to the Czech Republic: the beer (which I already loved, to be fair), the mustard (hořčice), and—above all—ribs (žebra).

Over time your palate adjusts, and you realise that beer isn’t just beer, and ribs aren’t just ribs. Some are fine, some are forgettable, and a few become the reason you plan your next weekend meal.

This guide is my ongoing attempt to map the best ribs in Brno, entirely based on personal taste. It’s subjective by nature, and contributions from fellow expats are genuinely welcome.

I’ll admit a small bias upfront: I already know which ribs are my favourite in Brno. But before revealing them—and before telling the story behind them—I’m testing alternatives to see whether any real challengers emerge.

Each time I try a new place, this article will grow with a fresh entry. Consider it a living guide to the city’s most iconic žebra.

Bohémovna u Putny

Address: Václavská 233/10, 603 00 Brno-střed

Despite the name displayed on their website — Americano Burger & Ribs — this place wasn’t particularly expat-friendly, at least not during my short visit to pick up a takeaway order (to be fair, there wasn’t much to communicate anyway). But in this guide, expat-friendliness is not the main criterion.

I ordered their Holiday MIX, a generous 1.6 kg plate meant to be shared: ribs, wings, chicken thighs and baked bread with garlic-herb butter, for 570 CZK. The bread was genuinely good — warm, aromatic, comforting — probably the most convincing element of the whole experience.

The rest of the mix was… fine. A slightly sweet glaze (honey, maybe?) with a touch of spiciness, but nothing that truly stands out or lingers in memory. Everything leaned a bit on the dry side, which didn’t help. We finished the entire portion — we were four people — mostly because we knew it wouldn’t survive until the next day, not because we were blown away.

The price is fair, and the quantity generous. The ribs themselves are not bad, but not memorable either.

Verdict

A decent option if you’re nearby and hungry, but not a contender for the title. Good value, average flavour, and nothing that makes you mentally bookmark the place for future cravings.

Stopkova Plzeňská Pivnice

Address: Česká 5, 602 00 Brno-střed

This time, I went to eat at Stopkova — so we’re talking about ribs enjoyed on site, not takeaway. It’s a place I’ve visited many times over the years, so this wasn’t unfamiliar territory.

From a language perspective, there’s no issue at all: we’re right in the city centre, communication is easy and straightforward. That said, this visit once again confirmed what has often been the weak point of the experience here: the service.

Not because of inefficiency — quite the opposite — but because of a generally grumpy, unwelcoming attitude. As we say in Italy, a certain tendency towards being “facce di…”. It’s a pity, really. A bit more warmth, a smile here and there, wouldn’t hurt anyone. On the contrary: the whole world would benefit from it, and so would the restaurant itself — people are far more likely to come back when they feel welcome, whatever the place may be.

On the food side, though, things go much better. The beer is excellent, as expected, and I already had good memories of the kitchen in general. The ribs confirmed that impression: slightly spicy, served with two sauces — a classic barbecue and a cheese-based one that’s interesting, albeit quite heavy on the garlic.

The texture is right: the meat separates easily from the bone, which is always a good sign. 800 grams for 359 CZK is also a competitive price (especially in city center).

Verdict

Yes to the žebra. Clearly better than the previous place.
The service, however, remains an area that could — and should — be improved.
